RECIPE – Onion Soup

A french classic that only takes a handful of ingredients & is very easy to cook.

Top it off with some fresh baguette – grilled with some Gruyère cheese – mmm…


  • 2x tbsp butter
  • 4x onions – peeled & finely sliced
  • 2x tbsp flour
  • 1L stock (beef/veggie)
  • 1x glass of white wine (optional)
  • Salt & pepper


  1. Belt butter in a pot the throw in the sliced onions mixing to make sure it’s all covered in the melted butter
  2. Cook on a medium heat stirring regularly until onions are soft & brown (took me 20 mins)
  3. Add flour & cook it out for a further 2 mins
  4. Deglaze the bottom/sides of the pan with some stock (the brown caramelised bits on the bottom/sides are full of flavour) – deglazing = pouring in some liquid to loosen the bits & scrapping the pot like mad to get them off the bottom & into your soup
  5. Add the rest of the stock (and optional wine)
  6. Season with salt & pepper if required
  7. Bring to a boil & simmer for 30 mins

It did take about an hour but it’s a nice, tasty soup & perfect for a cold night.
