Oscillate Wildly – Degustation Dinner – Newtown

Before leaving for a 2 month overseas holiday, I decided to meet up with a few friends for a lovely dinner at Oscillate Wildly – a Japanese/French fusion restaurant. It is a very inventive restaurant with creative uses of different flavours & textures.

This is a degustation-only place ($100) so that takes the trouble out of deciding what to eat. Incidentally, there is a very good bakery right next door (Black Star Pastry) if you’re ever in the neighbourhood.

We’re each given a menu of what to expect for today’s dinner and the thing I notice is that they’re either too cool for it, or they just haven’t bothered giving names to any of their dishes. Instead, listed are the wine pairings (which I did not partake in) and 3 ingredients to describe the dish.

First up, some lovely sour dough bread.

Kingfish, Cucumber, Soy

This is a lovely starter to the dinner, sitting on a wasabi leaf & decorated with delicate cucumber pearls.

Alaskan King Crab, Horseradish, Seaweed

This was also a lovely dish, the horseradish giving us that little kick, the crab was delicious & the crisp, crunchy texture of the apple pieces really gave it a lovely contrast.

Carrot, Cepe, Walnut

This would have to be one of the more interesting dishes of the night, I was quite fascinated by the sponge-like carrots, I think my other dining companion found it a little too out-of-this-world though. It was just so soft & fluffy & sponge-like. This lay on a bed of other carrots & mushrooms with the bottom layer consisting of ground walnuts & dehydrated carrots.

Whiting, Fennel, Puffed Scallop

Another interesting dish, the puffed scallop is dyed black with squid ink & reminded me of the prawn crackers you get at Asian restaurants. The soup around the Whiting was very tasty, the thick viscosity contrasting with the foam on top.

Pork, Young Almond, Coffee

This would have to be one of my favourite dishes of the night. Strips of pumpkin paper, coffee foam & pork nestled on a bed of pine seeds go surprisingly well together.

Beef, Samphire, Prawn Floss

Another one of my favourite dishes of the night. Beef was perfectly cooked, just the way I liked it – definitely a different take on surf & turf.

Elderflower, Lychee, Rose

Lychee & ginger with an elderflower mousse & a dollop of rose-water ice cream.

Meyer Lemon, Apple Cider

Have you ever had an apple cider sorbet? Well, now I have. It was tart but quite nice. One of my dining companions was not particularly fond of the sorbet part of the dessert but the lemon souffle was really quite lovely – I thought the sorbet went well with it.

Petite Fours

Some lovely petite fours to accompany our bill. Chocolate & walnut truffle inside a non-edible walnut & toasted sesame seed marshmallow.

All in all a good meal, sometimes I think they try a bit too hard to make things see out-there but that adds to the wow factor I guess. It’s definitely a meal that I know I won’t find at many other places.

If your taste buds are on the more adventurous side, you really ought to go to Oscillate Wildly.

The lowdown:

The good – adventurous food in terms of taste & textures

The mediocre – not much, although for some, the food might slightly miss the mark on some dishes – still a lovely meal though
