RECIPE – Blue Cheese Burgers

Mmm…blue cheese – is there anything you can’t go with. I was watching one of Heston Blumenthal’s tv series before where he made a chocolate fondant with blue cheese – this is something I shall have to try to make at some point.

Anyway, I digress, I felt like a burger & I had a bit of leftover blue cheese – why not combine them?

Blue cheese burger pattie on some caramelised onions & mushrooms, topped with butter lettuce on toasted turkish bread – yum.

Pattie Ingredients:

  • 1x onion halved
  • 1x clove minced garlic (optional)
  • 500g beef mince
  • Some blue cheese (depends on how strong you want it & what cheese you use, I used about 50g blue cheese)
  • Salt & pepper


  • Buns of some sort – I used Turkish bread buns which I toasted beforehand
  • Whatever else you want to add – I kept mine relatively simple with lettuce, onions & mushrooms


  1. Cut your onions in half, then grate them
  2. Chop up your blue cheese into small bits
  3. Combine all your pattie ingredients & season with salt & pepper if required
  4. Get your hands in there and mix everything together, making sure to break up any large blue cheese lumps.
    Note: The good thing about burgers is you can break off a bit of your mixture, fry it up & see if you’ve got all your flavours right, otherwise adjust with more cheese/seasoning/etc
  5. Roll into 6 balls, cover with glad wrap then fridge until required
  6. When you’ve got the rest of your burger toppings ready to go, thrown your pattie balls onto a hot pan & flatten them out
  7. Cook them to your preference, depending on how well done you want them, whack it into your bun & enjoy
