After a bit of a breather, I’m back onto creating another of Heston Blumenthal’s recipes from his In Search of Perfection series.

Today (well over several days, really), it’s Heston’s perfect spag bol.

Waku Ghin – Dinner – Singapore

Tetsuyas, many, many years ago, was my first fine dining experience and I absolutely loved it. I know Waku Ghin has been open for a while (and currently ranked 39th best restaurant in the world according to Restaurant Magazine) but I balked at have to pay >50% more in Singapore than his Australian degustation.

However, I was feeling a bit of a splurge coming on so I thought, why not?

Plus I did want to go check out Marina Bay Sands complex (I’m on a boat, yeah!)

RECIPE – Heston Blumenthal slow roasted rib of beef

Yes, another Heston recipe, maybe I am a bit obsessed but it’s only coz his recipes are so awesome. (More of my Heston experience/recipes here)

This is really a very, very easy recipe, it takes a long time but requires very little involvement and the results are fantastic. Melt in the mouth beef, packed full of flavour and a wonderful, rich sauce.

I can’t describe how wonderful it is, the meat just falls apart, no knife required & the taste is astonishingly good considering how little effort goes into it.

RECIPE – Heston Blumenthal’s Perfect Black Forest Gateaux (BFG)

Posted in 1 - Laudable :D, Chocolate, Complex, Cuisine, Dessert, dessert, German, Recipe Difficulty, Recipes with tags , , , , , , , , , on August 5, 2011 by Monitor Muncher

Phew, having taken on the double challenge of 2 recipes from Heston’s In Search of Perfection tv series I am now done.

Heston’s perfect baked alaska & perfect black forest gateaux (BFG) have now been ticked off my to-do list. (See here for other Heston Blumenthal related posts)

Why the 2 of them in one go? Because the BFG has an excess of 12 egg whites leftover and I didn’t really fancy a 12 egg white omelette.

RECIPE – Heston Blumenthal’s Perfect Baked Alaska

Posted in 1 - Laudable :D, American, Complex, Cuisine, Dessert, Dessert, dessert, Meal Type, Recipe Difficulty, Recipes with tags , , , , , , , on July 29, 2011 by Monitor Muncher

As you may know, I recently dined at Heston Blumenthal’s Fat Duck Restaurant in London and it. Blew. My. Mind.

Having watched his tv series a million times (Heston Blumenthal: In Search of Perfection), I decided that I wanted to make his perfect BFG (Black Forest Gateaux). I’ve attempted a regular Black Forest Gateaux recipe before but having tasted Heston’s BFG at his restaurant, I aspired to do better. (See here for other Heston Blumenthal related posts)

What does BFG have to do with Baked Alaska, you ask?

The only thing was, BFG required 18 eggs with about 12 egg whites left over – what to do with it? Why, attempt his Perfect Baked Alaska recipe, of course. So I’m working on them both at the same time – first to be completed is the Baked Alaska (Ed: Heston’s Perfect Black Forest Gateaux now completed).

Slight flickering of flames on the baked Alaska

I actually made more than one Baked Alaska as there were plenty of leftover ingredients. Heston’s perfect Baked Alaska was not hard to make – just time-consuming.

Tabou – Dinner – Surry Hills (Closed)

Posted in 1 - Laudable :D, Cuisine, Dinner, European, French, Meal Type, Price, Restaurants, Super Splurge (>$30), Surry Hills, Sydney with tags , , , , , , , on June 16, 2011 by Monitor Muncher

I was here in Feb 2011 and since then, this place is no longer in business. It was strange, the website is still working and there are still chairs & tables inside.

*sigh*

It was good and I had yet to try the dessert menu so I was very much looking forward to returning but alas!

Complimentary Baguette

You know a place is going to be fantastic when all you want to do is eat the bread all day.

Such soft, fluffy interior with a lovely crunch on the outside – I wish I could bake bread this good. After we had devoured the bread, our waiter asked us if we wanted more & though we had several dishes to get through, I couldn’t help but say yes please.

OMFG!!!!! Never in my life have I had such a FANTASTIC dining experience as that at Fat Duck Restaurant in Bray, England. Heston Blumenthal is an absolute genius & I would shout it from the rooftops if that would help me get another reservation.

Top 3 restaurant in the WORLD in 2010, it’s consistently been one of the best restaurants in the world and an absolute must on my recent trip to Europe.

This was, by far, the best restaurant I’ve ever been to in my entire life (so far).

After a 5 min cab ride from Maidenhead train station, the 4 of us arrive at the Fat Duck Restaurant, all ready to have a culinary experience of a lifetime.
