RECIPE – Heston Blumenthal’s Perfect Black Forest Gateaux (BFG)

Phew, having taken on the double challenge of 2 recipes from Heston’s In Search of Perfection tv series I am now done.

Heston’s perfect baked alaska & perfect black forest gateaux (BFG) have now been ticked off my to-do list. (See here for other Heston Blumenthal related posts)

Why the 2 of them in one go? Because the BFG has an excess of 12 egg whites leftover and I didn’t really fancy a 12 egg white omelette.

RECIPE – Heston Blumenthal’s Perfect Baked Alaska

As you may know, I recently dined at Heston Blumenthal’s Fat Duck Restaurant in London and it. Blew. My. Mind.

Having watched his tv series a million times (Heston Blumenthal: In Search of Perfection), I decided that I wanted to make his perfect BFG (Black Forest Gateaux). I’ve attempted a regular Black Forest Gateaux recipe before but having tasted Heston’s BFG at his restaurant, I aspired to do better. (See here for other Heston Blumenthal related posts)

What does BFG have to do with Baked Alaska, you ask?

The only thing was, BFG required 18 eggs with about 12 egg whites left over – what to do with it? Why, attempt his Perfect Baked Alaska recipe, of course. So I’m working on them both at the same time – first to be completed is the Baked Alaska (Ed: Heston’s Perfect Black Forest Gateaux now completed).

I actually made more than one Baked Alaska as there were plenty of leftover ingredients. Heston’s perfect Baked Alaska was not hard to make – just time-consuming.

RECIPE – Black Forest Gateaux

Nowadays, when you buy a Black Forest Gateaux at the shops, it does not resemble the traditional recipe much.

A proper Black Forest cake should have layers of white & black sponge, sour cherries, cream & chocolate mousse, etc.

Best Black Forest Gateaux I’ve ever had was at Heston Blumenthal’s Fat Duck restaurant. You cannot beat that BFG. This recipe is still good, but it’s no Heston. (ED: I have since attempted Heston’s Perfect Black Forest Gaetaux)

My attempt VS Adrian Zumbo’s Masterpiece

This is a recipe I did about a year ago (again I had a bit of a career break which I was enjoying) 😀 It is a multi-layered chocolate mousse cake that takes hours of preparation to make.

This is something from Masterchef Australia and the evil maestro Adrian Zumbo with his delightful, yet painstaking creations.

This is NOT for the faint-hearted – it’s a very long, complex recipe… I spread this over 3 days due to time & the massive clean-ups required.

The layers (top to bottom)

RECIPE – Le Papillon (The Butterfly) – Chocolate Dome Cake

For any of you out there that watch Masterchef Australia, Poh was the runner-up in the first season. She seems to have scored a better deal than the winner though, she has her own tv show and everything.

Anyway, my dear brother was the one  keen on making this recipe and brought it to my attention. Because I ‘had nothing better to do’, I ought to make it with him (was still on the career break at this point).

This is a chocolate mousse cake with layers of biscuit, poached pears & croustillant (wtf is that?!?) with a chocolate coating outside.

RECIPE – Chocolate Brownies

I recently found myself on a “career break” and decided to have a bit o’ fun in the kitchen.

Now, there are many things which I’ve never cooked before because it just seemed so much easier if one were to just buy the freakin’ thing.

I figure though, if kiddies can make brownies, surely an adult (like myself) should be able to handle it.
Jumped on the google and found meeself a few recipes – all of which were pretty gross when you think about it – mashed-up a few to get the recipe I wanted.

Now, I’m not one to skimp on fat, I always get full cream milk, don’t buy fat free/low fat stuff, but these brownie ingredients, I didn’t want to think about.

But you do only live once (just some not as long or as healthily as others) so here goes…

The lowdown:
– 200g butter
– 200g dark choc (have you ever read % of cocoa in dark chocs? found a bunch which only had 15%… managed to find a 70% tho)
– 4 eggs
– 200g sugar
– 200g flour
– smidgen of salt
– small bag of crushed walnuts (or choc chips or pecans or whatever your preferred little bits in brownies)
